For the pizza dough
- 400g OO flour
- 100g polenta

- 10g dried yeast
- 2 tbsp olive oil
- 320ml warm water
For the tomato sauce
- ½ onion, chopped

For the topping
- 200g beef striploin, cut into strips
- 25g chilli flakes
- 100g buffalo mozzarella
- 50g grated Parmesan
- 10 basil leaves
Method
1. Dissolve the yeast in the warm water
2. Add all the dough ingredients together and mix until it forms a soft dough
3. Rest the dough for 20 minutes, allowing it to prove and expand. While it rests, marinate your beef strips in the chilli flakes with a little olive oil
4. For the sauce, add the onions and garlic to a pan and cook at a low temperature, taking care that they don’t brown
5. Add the tomatoes and tomato puree and reduce until a thick sauce, season and add basil leaves
6. Preheat the oven to 200°C/ Gas 6. Add your marinated beef strips to a hot pan with a little oil. Brown the beef a little but do not cook through
7. Take the pizza dough and knead (mix) again until soft, roll out into a large 12 inch pizza
8. Spread the tomato sauce onto the pizza and add the sliced beef
9. Tear the mozzarella over the beef and cook in the oven for 6-7 minutes
10. When the pizza is cooked and the dough is crispy, remove from the oven and finish with torn basil leaves and some grated Parmesan.
