Ginger and Lime Cake

Serves: 8 people


  • 280g plain flour
  • 1 tbsp baking powder
  • 1 ½ tsp ground ginger
  • pinch of salt
  • 115g light brown sugar
  • 2 eggs
  • 250ml milk
  • 85g butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 ½ lime rind


  • 150g cream cheese
  • juice of 1 lime
  • 200g icing sugar
  • rind of ½ lime, to decorate


1. Preheat the oven to 180°C/ Gas 4
2. Grease and prepare two 8 inch cake tins
3. Sift together the flour, baking powder, ginger and salt. Stir in the sugar
4. Lightly beat your eggs in a large bowl then beat in your milk, butter, vanilla extract and lime rind
5. Make a well in your dry ingredients and pour in your beaten liquid ingredients
6. Stir until combined – DO NOT OVER MIX!
7. Spoon your mixture into your prepared tins
8. Bake in your preheated oven for 17 minutes or until firm to touch and cooked in centre. You can check with a sharp knife, it should come out clean
9. When cooked, leave to cool
10. Once the cake is cool you can start with your icing
11. Mix your cream cheese, icing sugar and lime juice until smooth and creamy
12. Cover the top of one of the cakes with your icing or, alternatively, you can make a buttercream with lime juice in. Then sandwich the two cakes together and cover the top of the cake with your icing and lime rind – maybe adding some sliced strawberries and grapes to decorate
