Dairy-free Apricot Rock Cakes
For 10 people
15 minutes cooking time
Oven temperature 180°c/Gas Mark 4/350°F
- 100g dried apricots
- 250g self-raising flour
- 125g soya margarine
- 75g caster sugar
- 2-3 tablespoons soya milk
- 1 egg
Set the oven to 180°c/Gas Mark 4.
Snip apricots into small pieces.
Add the flour and butter into a bowl and rub together to make breadcrumbs.
Stir in sugar and apricots.
Add the egg and mix in enough milk to make soft lumpy mixture.
Using spoons divide the mixture into 10 cakes and place on an oiled baking sheet.
Bake in the oven for 12-15 minute until golden brown and firm to the touch.
Place on a wire rack to cool.
Eat and enjoy!
